Stovetop Roasted Potatoes

I really do adore potatoes.  And roasted potatoes are my favorite.  The only problem is that I really, really, really hate turning on the oven in the middle of summer.  This recipe is my solution.  No oven, but I still can have delicious roasted potatoes.  I normally use fingerlings for this recipe, but any small potato will do the trick in this super simple recipe. 

Ingredients

  • 2 Tablespoons unsalted butter
  • 1 to 1 1/2 lbs fingerling (or small) potato, rinsed
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 2 Tablespoons chopped fresh rosemary (optional)

Directions

  1. Melt the butter in a dutch oven or large heavy-bottomed pot.
  2. Add the whole potatoes, salt, and pepper, and toss well.  You want the potatoes to be in a single layer.
  3. Cover the pot and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from sticking to the bottom and burning.
  4. Turn off the heat and toss with the rosemary.  Allow the potatoes to steam for another 5 minutes. Be careful to not overcook.
  5. Serve hot.
